1. How to Cook

I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

2. Easy recipe

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

Amazing pancakes

Special ingredients


  • 1/2 ripe avocado
  • 1/2 ripe banana
  • 1–2 tsp breastmilk or formula (optional)

Cut the ripe avocado in half, remove the pit carefully, and use a spoon to scoop the soft flesh into a clean mixing bowl. Make sure the avocado is fully ripe for the creamiest texture. Peel the ripe banana and slice it into small pieces. Add the banana pieces to the bowl with the avocado.

Using a fork, mash the avocado and banana together until the mixture becomes smooth and creamy. Continue mashing until there are no large lumps. For an extra silky texture, you may use a blender or food processor.

If the purée is too thick, add 1–2 tablespoons of breast milk, formula, or regular milk. Stir or mash again until you reach your desired consistency.

Serve fresh for the best taste and nutrition. If needed, add a small squeeze of lemon juice to help prevent browning before serving.
