I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

Amazing pancakes
Special ingredients

- 1 small potato
- 1/2 cup broccoli florets
- 1 tsp olive oil
- 2–4 tbsp warm water

Start by washing and peeling the potato thoroughly. Cut it into small, even cubes (about 1-inch pieces). Smaller cubes cook faster and more evenly, giving you a smoother purée texture. Place the cubed potatoes into a steamer basket over boiling water. Cover with a lid and steam for 5 minutes. Starting with the potatoes ensures they cook evenly since they take longer than broccoli. After the potatoes have steamed for 5 minutes, add the broccoli florets to the steamer basket. Cover again and steam everything together for another 8–10 minutes, or until both the potatoes and broccoli are fork-tender and very soft.
Transfer the steamed vegetables to a blender or food processor while still warm. Add olive oil and a small amount of warm water (or reserved steaming liquid). This helps create a silky consistency. Blend on high until completely smooth and creamy.
Scrape down the sides as needed. Add more warm water gradually if the purée is too thick. Blend longer for an ultra-smooth, velvety texture.

- Store in an airtight container for up to 3–4 days.
- Freeze in portion-sized containers or ice cube trays for up to 2 months.
- Warm gently on the stovetop over low heat, adding a splash of water or olive oil to restore creaminess.
