I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these eggs.

How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these boats couldn’t be easier to make or more delicious.

Amazing pancakes
Special ingredients

- 1 medium sweet potato
- 2 medium carrots
- 2–4 tbsp breastmilk, formula, or warm water

Peel the sweet potato and cut it into small, even cubes to ensure quick and even cooking. Peel the carrots and slice them into thin rounds or small chunks. Keeping the pieces similar in size helps them cook at the same rate. Place the sweet potato cubes and sliced carrots into a steamer basket over boiling water. Cover and steam for 12–15 minutes, or until both vegetables are fork-tender. They should be soft enough to easily pierce with a fork but not mushy.
Carefully transfer the hot vegetables to a high-powered blender or food processor. Be cautious of steam when opening the lid. Add your preferred liquid (such as cream, milk, vegetable broth, or coconut milk) a little at a time. Start with a small amount to avoid making the purée too thin.
If the purée is too thick, add a small splash of additional liquid and blend again. Season with salt, pepper, or optional spices to taste.
Allow the purée to cool slightly before serving. For babies or toddlers, ensure it cools completely to a safe temperature before offering.
